Like sharing the password to the Safe House or revealing a key plot twist in a movie, I’m reluctant to give away just how you get inside The Dark Room (T.D.R.), the “secret steakhouse” at the Saint Kate Hotel. But I will provide clues: Take the elevator (or steps) to the second floor, turn right and approach the restaurant Aria. You’ll also be near the entrance to the champagne bar Giggly. The Dark Room will not be visible to you but it is very, very close…

The Dark Room is a most unusual place, a quiet escape from the garrulous sound of a busy hotel. And the food, beginning with a gratis glass of sparkling rosé from Giggly and one-bite amuse bouche, is exceptional.
